The Calgary Sun reports about three quarters of the 35 fully-sanctioned food trucks have been written up, in some cases for what’s called critical violations.
Most of the problems deal with the storage and handling of food products, specifically temperature control. If not properly maintained can allow bacteria to grow, which can cause food poisoning.
Some operators have also been cited for not having enough water on-hand, which is crucial for cleaning.

Food trucks have been up-and-running in the city for the past 14 months.
